I'm Back - Homemade Cinnamon Rolls

Okay - so enough sluffing already - let's get back to blogging.  Well I must say this summer turned out busier than expected.  I work part-time but when summer arrives, it's more like full-time.  I get to work when everyone else goes on vacation.  So needless to say, this has been a busy summer of working.  I also got to hang out with my family while they were in town for a couple weeks.  We were also able to squeeze in a couple weekend camping trips.  But mostly we just stayed close to home.

Well one day I was craving some yummy homemade cinnamon rolls.  So one day when I didn't have to work, I pulled out my trusty bead maker and got to work.  I love using my bread maker to makes all kinds of dough for breads and rolls - so much easier than mixing, kneading, and waiting for it to rise.

Add the following ingredients in this order to your bread maker:
1 egg and then enough warm water to equal 1 cup
1 tsp Lemon Juice
3 T. Oil
1/3 C. Sugar
1 tsp. Salt
3 1/2 C. Flour
1 1/2 tsp. active dry yeast

I use the dough setting and let it do its thing while I work on my other 50 million projects that have been accumulating, which include mostly laundry, dusting and vacuuming.  Why do these projects NEVER get marked off my "to do" list permanently?????  Anyway, when it's done your dough is ready to roll out.

I spread a little butter on the dough.

Sprinkle on a little cinnamon, sugar, and raisins (if you like), on as well.

Roll it up.

Then cut into pieces.

Then put on a greased jelly roll pan, cover and let raise until double in size.

Remove plastic wrap and bake at 325 for 15-20 min, or until done.

Make some cream cheese frosting while they're baking and then after they've cooled - Frost and enjoy!!  These are one of my favorite treats.

So has anyone else had a crazy summer?  I'm sure you've seen these cool tier plates around blog land, but check out this post for more details.
