A Little Chocolate Goodness
Those of you with zucchini coming out of your ears need to try this yummy Chocolate Zucchini Cake recipe I got from my mom. It's delish. I made this one Sunday afternoon to take to work on Monday and it was gone in about 20 minutes. Plus it's somewhat healthy right since it has zucchini in it.
Here ya go and you won't be disappointed. It's best warm out of the oven, but cooled is just as good too.
Zucchini Chocolate Cake
1/2 C. Soft margarine
1/2 C. Salad oil
1 3/4 C. Sugar
2 Eggs
1 t. vanilla
1/2 C. Sour milk (I just use regular milk with a little lemon juice)
2 1/2 C. grated Zucchini
2 1/2 C. Flour
1/2 t. baking powder
1/2 t. salt
4 T. Cocoa
1 t. baking soda
1/2 t. Cinnamon
1/4 C. Chocolate Chips - I usually use a bit more
Cream margarine, oil and sugar. Add vanilla and sour milk, beat with mixer or by hand. Add zucchini and sifted dry ingredients. Turn into greased 9x13 pan. Sprinkle with Chocolate chips. Bake at 325 for 40-45 min or springs back when touched. Needs no icing.
